Mandukaparni Tambli(Yoghurt
curry)
Mandukaparni(Centella asiatica) is a herb for brain booster. So used as day today cuisine to enhance grasping and memory power of children and old aged in general and dementia in specific. It’s a stolon so can be easily grown in kitchen garden.
Tambli is a yoghurt curry eaten with rice. It is prepared with vegetables, herbs, coconut and curd and will be amazing side dish for rice.
Ingredients:
Handful of Mandukaparni leaves
Ghee for roasting
Grated fresh coconut – ½ cup
Cumin seeds -1/2 tea spoon
Saindhava lavana( rock salt) or salt – as per taste
Water – 1 cup
Fresh Butter milk – 1 cup
For Tadka (Seasoning): Oil, Mustard seeds, Red chili, curry leaves.
Method:
1. Wash fresh Mandukaparni leaves, chop into pieces.
2. In a pan roast the leaves with ghee.
3. Grind roasted Mandukaparni, Grated coconut, Cumin seeds, Salt and water in a mixi jar to smooth paste.
4. Transfer to the vessel add Butter milk, mix thoroughly.
Seasoning: in a pan heat 1 tsp oil, splutter mustard seeds, add curry leaves and Red chili, cool it and add to the Tambli.
