Kaidarya(Curry leaves) chutney:
Curry leaves are commonly available in everyone’s kitchen used to add flavor to the dishes. They are rich source of Calcium, Potasssium, Carotene hence used for hair and skin ailments.
Ingredients:
Curry leaves – ½ cup
Fresh Grated coconut - 1cup
Roasted peanut – 2 tsp
Garlic – 3 cloves
Ginger – 1 inch
Red chili – 2
Tamarind – small ball
Cumin seed – ½ tsp
Salt – as per taste
Water for grinding
Oil for roasting
Seasoning: Oil, mustard seeds, few curry leaves.
Method:
1. Wash curry leaves thoroughly and dry.
2. In a pan heat oil and roast ginger, garlic and red chili till garlic turns brown,
3. Now add curry leaves and continue to roast till curry leaves turn crispy.
4. Cool and grind in a mixi jar with grated coconut, roasted peanuts, tamarind, salt and water into a smooth paste.
5. Seasoning: in the same pan heat oil, splutter mustard seeds, few curry leaves cool it and mix with chutney.
This chutney can be eaten as side dish for rice, roti and chapati.
