Kaidarya, Curry leaves are rich source of carotene, Calcium and little Iron, which are required for hair growth. Ayurvedic Acharyas explained this as Keshya- Good for Hair i.e. improves hair growth, prevents premature greying and removes dandruff.
Kaidarya can be taken internally as well as used topically. Its used in seasoning in almost all spicy dishes. But many times it is removed out while eating because of unpalatability. It can be made palatable by adding red chili, tamarind and jaggery and can be enjoyed from children and elders.
Ingredients:
1. Curry leaves- 1 feast
2. Chanadal- 1 tsf
3. Urad dal - 1 tsf
4. Dhaniya seeds - 1 tsf
5. Methi seeds - 1/2 tsf
6. Jeera - 1/2 tsf
7. Red chili - 2
8. Tamarind, jaggery and salt - as required
1 tsf oil for roasting.
Recipe:
1. Wash and dry the curry leaves.
2. In a pan drop 1 tsf oil, when hot roast all the ingradients - Methi, Chana dal, Urad dal, Dhaniya, Jeera, Red chilli.
3. Add Curry leaves and continue to roast till leaves becomes crispy.
4. Cool and blend, store in air tight container.
Enjoy with Hot rice and Ghee.
